Creamy Montana Breakfast Scramble in Cast-Iron

My, oh, my this is a scrumptious and hearty breakfast dish that also makes for a great lunch or dinner. Beware of the tantalizing aromas that will waft throughout the house during each step. You'll be drawn in and unable to resist! This recipe goes with our other post: Cheery Santa and Snowman Table with Apple-Cranberry Scones. Don't miss that one because the scones are a perfect addition to this scramble.

This recipe unfolds one delicious step at a time. We used cast iron to cook the veggies and meat, and for the final baking. For strict veggie-only eaters out there, the meat in this dish can easily be replaced with additional vegetables like roasted peppers. You may use your cheese of choice, but we strongly recommend a sharp cheddar from Kerrygold, or a horseradish cheddar, which is what we used below.
